Pulled pork buns with broccoli slaw and sauerkraut

  • 2 wholegrain buns
  • 240g leftover cooked roast pork, shredded
  • 2 tablespoon barbecue sauce
  • 4 Brussels sprouts, finely sliced
  • 1 cup finely sliced broccolini or broccoli (stalks and leaves)
  • 2 tablespoons low-fat plain yoghurt
  • 2 teaspoons mayonnaise
  • 4 teaspoons toasted pumpkin or sesame seeds
  • 4 tablespoons sauerkraut
  • hot sauce, to serve (optional)

    1 Halve and toast buns. Combine pork and barbecue sauce and top each bun half with pork.

    2 In a bowl, combine Brussels sprouts and broccoli. Add yoghurt and mayonnaise, and mix well to combine.

    3 Serve buns topped with seeds, sauerkraut and hot sauce, with slaw on the side.
