Tasty beef with noodles

  • 500g rump steak
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • 6 tablespoons orange juice
  • 2 cloves garlic, crushed
  • 2 tablespoons chopped coriander, plus extra for serving
  • 170g thin rice noodles
  • spray oil
  • 3 spring onions, finely chopped
  • 2 cups mushrooms, sliced and shredded
  • 1 red capsicum, diced
  • 2 cups shredded bok choy

    1 Trim off visible fat from steak and cut in half. Place in a non-metallic dish. Mix balsamic vinegar, olive oil and orange juice together with garlic and coriander and use to coat beef. Leave to marinate for at least 1 hour or overnight. Remove beef from marinade and allow to come to room temperature.

    2 Place noodles in a large heatproof bowl and pour over enough hot water to cover. Leave to stand for 10 minutes.

    3 Spray a pan with a little oil. Heat pan until hot. Add beef and cook each side until cooked to your liking. Remove and leave to rest on a warm plate, covered with foil.

    4 Spray pan with a little more oil and add spring onions, mushrooms and capsicum. Cook with marinade until veges are softened. Add drained noodles and cook for a few minutes. Add bok choy and cook until wilted.

    5 Slice beef thinly on a diagonal. Serve with noodles and vegetables. Sprinkle with herbs.
