Yakitori skewers with seasonal salad
Ingredients
- 24 wooden skewers, soaked in water for 20 minutes
- Sauce
- 2 tablespoons reduced-salt soy sauce
- 2 tablespoons brown sugarlight brown cane sugarX
- chilli flakes, optional
- 200g chicken mince
- 2 cloves garlic
- 2 dried shiitake mushrooms, soaked in hot water and chopped
- 2 teaspoons reduced-salt soy sauce
- 1 spring onion, chopped
- 1 tablespoon plain flourall purpose flourX
- pinch of salt, to season
- white pepper, to season
- 2 corn sweetcornXcobs, boiled and each cut widthways into 4 pieces
- 1 tablespoon reduced-fat spread
- 1 tablespoon soy sauce
- 200g chicken thigh meat, cut in 2-3cm lengths
- 4 spring onions, white part only, cut in 2-3cm lengths
- white pepper, to season
- pinch of sea salt flakes, to season
Instructions
Soy chicken skewers
1 Preheat chargrill pan or barbecue to high. Mix together sauce ingredients and set aside.
2 Mix together chicken mince, garlic, mushrooms, soy sauce, spring onion, flour, salt and white pepper. Divide mixture into 8 portions and shape each one around a skewer.
3 Lay foil on top of a chargrill or barbecue and leave mince skewers on top to cook for 5 minutes or until cooked through. Turn skewers occasionally and brush with sauce while cooking.
Corn skewers
1 Preheat chargrill pan or barbecue to high. Thread corn onto 8 skewers and chargrill or barbecue for a couple of minutes until lightly charred.
2 Butter with spread and brush with soy sauce. Cook for 1 more minute before serving.
Chicken thigh and spring onion skewers
1 Preheat chargrill pan or barbecue to high. Thread alternating chicken and spring onion onto 8 skewers (2 pieces of chicken and 2 pieces of spring onion per skewer).
2 Chargrill or barbecue for couple of minutes or until cooked through, turning occasionally. Season with white pepper and sea salt flakes.
To serve
1 Serve 3 skewers (1 of each) per person, with a serving of seasonal salad (you'll need to make double the quantity).

Variations
Make it gluten free: Check soy sauce is gluten free and use gluten-free flour. Check mayonnaise, soy sauce and dashi in salad are gluten free.
