

Orange and pear couscous crumble
Ingredients
- 3 oranges, peeled, sliced
- 3 pears, sliced
- 1 stick cinnamon, broken up
- 1 tablespoon liquid honey
- Couscous crumble topping
- ¾ cup couscous
- 1 orange, zest
- ¾ cup orange juice
- 1 tablespoon almond oil
- 1 tablespoon sugar
- 2 teaspoons icingfrostingX sugar
- 12 tablespoons reduced-fat, plain Greek yoghurt

Instructions
1 Preheat oven to 180.C. Place fruit in an ovenproof dish with cinnamon pieces, 1/2 cup water and honey.
2 To make topping, place couscous in a dish with orange zest. Heat orange juice until almost boiling and pour over couscous. Cover for 5 minutes. Fluff with a fork and stir in almond oil and sugar.
3 Sprinkle topping over fruit. Bake for 25 minutes or until fruit becomes soft and topping golden. Cover with tinfoil if crumble browns too quickly. Sprinkle with icing sugar before serving. Serve with a spoonful of yoghurt and sprinkle over cinnamon if you prefer.
