Seared beef with soba noodle salad

  • 400g sirloin steak, thinly sliced
    • 270g soba noodles
    • 4 cups green beans, cut in 3cm lengths OR 2 cups green beans with 2 cups sugar snap peas, trimmed
    • 6 small radishes, thinly sliced
    • 100g baby spinach
    • 2 tablespoons mirin
    • 1 tablespoon tamari soy sauce

    1 Spray a large frying pan with oil and place over high heat. Cook beef for 2–3 minutes or until cooked to your liking. Transfer to a plate, cover and rest for 5 minutes.

    2 Meanwhile, cook soba noodles following packet directions, adding beans for the last 2 minutes of cooking time. Drain, rinse under cold water and drain again.

    3 Place noodles and all veges in a bowl. Combine mirin and tamari in a small bowl and add to noodles. Toss gently to combine.

    4 Divide noodle salad among 4 plates and top with beef. Garnish with fresh coriander if preferred.

    Variations

    Make it gluten free: Use rice noodles instead of soba noodles.
