Spicy pork stir-fry

  • 475g pork stir-fry strips
  • 30g harissa spice mix
  • ¼ cup plum sauce
  • 2 spring onions, thinly sliced
  • 2 x 400g packs frozen stir-fry vegetables, partially thawed
  • 2 x 250g packs microwave brown rice

    1 Heat 1 tablespoon olive oil in  wok or large non-stick frying pan over high heat. Add pork strips and stir-fry for 4-5 minutes, or until browned and almost cooked through.

    2 Add harissa to wok and stir-fry for 1 minute. Add plum sauce, spring onions and vegetables. Stir-fry (adding 2-3 tablespoons water if mixture is too dry) for 1 minute, or until sauce heats through.

    3 Microwave rice according to packet instructions. Top with spicy pork stir-fry and serve.

    Variations

    Make it gluten free: Check harissa spice mix and plum sauce are gluten free.
