Sunflower and linseed porridge

  • 1 ½ cups rolled oats
  • 2 ¼ cups water
  • 1 cup skim milk
  • pinch salt
  • 1 tablespoon linseeds (aka flaxseeds)
  • 1 tablespoon sunflower seeds
  • ½ cup dried sweetened cranberries
  • 1 cup low-fat plain yoghurt

    1. Combine oats in a saucepan with water and milk. Bring to the boil, stirring occasionally, over a high heat. Reduce heat to low and simmer, stirring constantly, for 5-6 minutes or until thick.
    2. Stir linseeds, sunflower seeds and cranberries through porridge. Divide among 4 bowls and top each with 1/4 cup yoghurt to serve.
