Mini chicken meat loaves
- 1 onion, diced
- 1 clove garlic, finely chopped
- 400g chicken mince
- 3 slices whole grain bread, made into crumbs
- 1 tablespoon pizza-flavoured tomato paste or tomato pesto
- ⅓ cup chopped fresh herbs such as basil, coriandercilantroX, parsley
1 Preheat oven to 180°C. Heat a non-stick pan with oil spray. Cook onion and garlic until softened. Place in a large bowl.
2 Add remaining ingredients. Mix together with clean hands to combine well.
3 Spray an 8-hole muffin tin with oil. Divide mixture between holes, rounding the tops. Bake for 25-30 minutes until golden-coloured and cooked through. Serve with mashed potatoes, green beans, and gravy or relish. Garnish with flat-leaf parsley.
