  • 1 tablespoon olive oil
  • 1 red onion, sliced
  • 2 tablespoons pumpkin seeds
  • 1 tablespoon chopped, fresh thyme
  • 400g can butter beans, drained and rinsed
  • salt and pepper, to taste

    1 Heat olive oil in a large pan. Add onion, pumpkin seeds and thyme. Cook gently for 15 minutes, stirring, until onion is soft.

    2 Add butter beans. Mix well and season with salt and pepper. Serve immediately, or refridgerate and use as a base in one of the recipes below.

    Variations

    Try rosemary instead of thyme, and swap butter beans for canned chickpeas or mixed beans.

    This mix can be made a couple of days ahead. Store it in the fridge until you need it.
