Hoisin beef and vege stir-fry

  • 1 ⅓ cups brown rice
  • 4 teaspoons sesame oil
  • 500g beef steak, sliced
  • 3 carrots, sliced into batons
  • 2 cups shredded red cabbage
  • 2 cup broccoli florets
  • 4 cups shredded silver beet leaves (discard stems)
  • ¼ cup hoisin sauce mixed with ¼ cup hot water
  • ¼ cup peanuts, roughly chopped
  • fresh chilli, to garnish

    1 Cook brown rice according to packet instructions.

    2 Heat a large pan or wok over high heat. Add 2 teaspoons sesame oil. Add beef, cooking briefly until browned. Remove beef from pan and set aside, keeping warm.

    3 Add remaining sesame oil to pan. Add vegetables and stir-fry for 5 minutes, until tender. Add a little water if needed.

    4 Remove from heat and add beef back to pan, with any juices. Add hoisin and water and peanuts. Mix gently to combine.

    5 Serve beef mixture with rice and garnished with chilli slices.

    Variations

    Make it gluten free: Check hoisin sauce is gluten free.
